If you are a Pete Townshend fan, you may know that his record label is called " Eel Pie". So, here is the recipie:
EEL PIE
If that old Cockney favourite jellied eels are not to your taste, this fishy casserole might tempt you to try eel.
Sunflower oil 2 onions, chopped 1lb conger eel, cut into four pieces Seasoned flour 1 bay leaf 1 teaspoon cinnamon stick A small bunch of thyme 2 apples, peeled, cored and sliced 1 pint cider Crme fraiche to serve
Preheat the oven to Gas Mark 4/350F/180C. Cook the onion gently for five minutes until it is soft. Meanwhile dust the eel with the seasoned flour and put it into a casserole dish with the onion, bay leaf, apple, cinnamon stick and thyme. Pour the cider over, cover and bake for 10 minutes. Reduce the oven temperature to Gas Mark 1/275F/140C and cook for a further 30 minutes.
Stir in the crme fraiche before serving with mashed potato and seasonal vegetables.

Easy Inside out Chicken
4 or 6 boneless chicken breasts 1/2 cup Italian dressing 1/2 cup Italian Bread Crumbs
Heat oven to 350 F
Roll chicken breast in dry paper towels, dip in italian dressing and dredge in nbread crumbs. Bake for about a half hour.
